With over 30 years in the restaurant industry, Silvio has opened over a dozen Bob’s locations worldwide, serving as Regional Manager and Vice President of Operations. The service at Bob’s Plano is best-in-class, partly thanks to Silvio's incredible leadership and expertise. This Bob’s Steak & Chop House restaurant is located within the Omni Louisville Hotel. Paying homage to some of Louisville’s greatest treasures, the restaurant decor celebrates the rich history and tradition of American thoroughbred racing, Muhammad Ali, and the Kentucky bourbon industry. Alberto first joined Bob’s Steak & Chop House in 2002 where he started in the kitchen learning how to work in every position until eventually working his way up and being promoted to Executive Chef in 2022. His invaluable work-ethic, leadership, and dedication have all been a major part of the restaurant’s long running success.

She has been with Bob’s OKC since the doors opened in January 2021 and spent the last 12 of her 24 years in hospitality working in fine dining. Brooke grew up on a wheat and cattle farm in Okarche, Oklahoma and graduated from the University of Oklahoma in 2007.
